Xylanase, cellulase and protease enzymes production by fungi in rice straw medium under submerged fermentation.

Abstract
A total of 22 fungal species belonging to 13 genera were isolated from rice straw. Mitosporic fungi were representby 7 identified genera, in addition to 2 sterile mycelia. Zygomycota comprises 3 genera and Ascomycota represented only by a single. These fungi were screened for their abilities to produce xylanase, cellulase and peroxidase enzymes on rice straw medium. Among these, Aspergillus carneus was selected for optimization of enzymes production, for many reasons, it was the highest xylanase producer in rice straw and it has been reported that it does not produce mycotoxins. The maximum enzymes activity obtained by Aspergillus carneus was at pH 5 and 30ºC after 6 days of incubation.
